While everyone was enjoying the appetizers and the refreshing cocktails, our hard working crew was preparing lots of good eats like our signature pollo asado.

Truly a hidden gem, this special event venue is as remarkable as it is functional. It’s almost like it was custom made for last weekend’s wedding.

Placing skewered shrimp into a cup loaded with our signature salsas for our delectable Cocteles de Camaron appetizers.

Sweet aromatic steam escapes from the grill as our team grills up some of our finest tacos just outside of the party tent.

And, we definitely could not agree more.

Our Tostadita de Salmon Ahumado sits on a bed of cream cheese and is served on a fresh made tortilla chip. After being topped with micro greens it’s ready to be enjoyed!

For this occasion, a large tent had to be rented out in order to shelter everyone from the elements. Even in early November things can get a bit chilly at night and in fact a little bit of rain was in the forecast. Fortunately, Mother Nature was on our side that evening as there wasn’t even a drop in the sky.

Among the plethora of appetizers served on this evening was our beautiful Tostadita de Chorizo which features fresh guacamole and savory grilled Mexican sausage.

With the stunning Santa Susana mountain range serving as the backdrop it was easy to call this place our office for the day.

Our taco cart was situated just before the entrance to the grand tent where we were strategically located to be one of the first things guests would see as they entered the main festivities. In front of us was the majestic view of the mansion and behind us was the breathtaking view of the valley. Absolutely stunning.

In front of our cart was a clear view of the palatial mansion in the middle of the Hummingbird Nest Ranch estate.

Once everything was in place, the taco cart canopy was set up and the support tables were erected. From there we started immediately with the delectable appetizers. On the menu were tantalizing sophisticated delights such as our Tostaditas de Chorizo, Salmon Ahumado and Rebanadas de Tomates Heirloom. At the same time we offered simple classic items like mini bean and cheese burritos. There was something to help everyone get the party started!

One of the items we proudly served was our signature veggie tacos and here we are seasoning it just a little bit as the sun was setting behind us.

What better way to enjoy our finest selection of tacos than to serve them up on a fresh, piping hot hand-pressed tortilla?

Next came up the main offerings and for everyone at this soiree it was nothing but the best! We served our signature carne asada, exquisite pollo asado, succulent camarones and our mouth-watering veggie tacos all served on a fresh, hand-pressed tortilla.

A beautiful set of our Cocteles de Camaron appetizers assembled on a serving tray ready for everyone’s enjoyment.

Of course, we also offered our farm-fresh condiments and house-made salsas so everyone had the opportunity to fine tune their own masterpieces. And, to round out their meals, our chefs prepared creamy refried beans alongside fluffy Spanish rice.

Breathtaking views of the Santa Susana Mountains served as our backdrop for the evening as you can see from this image taken from the main house.
