The City of Santa Susana was founded in 1903 and is a former railroad town located mostly within the City of Simi Valley and partly in the neighboring Los Angeles neighborhood of Chatsworth. Part of its terrain includes the Santa Susana Valley which served as a stunning backdrop for our taco cart last Saturday at Hummingbird Nest Ranch.

The Santa Susana mountains served as a stunning backdrop as we were grilling up a storm for last Saturday’s wedding.
It was a bit hectic trying to have everything grilled and ready for everyone in time, but we managed to pull it off wonderfully. And, we have the epic views of this wonderful region to thank for helping us feel calm during the whole process.
As for our menu for the evening, we offered many of our classic tacos and one such delight was our exquisite veggie tacos.

This main ingredients in this brightly colored taco consists of electric red bell peppers, spicy onions and meaty portobello mushrooms. All these farm-fresh goodies get thrown onto the grill where they cook down a bit and emit a wonderful scent into the atmosphere. It was funny how many approached our grill at that moment saying, “Oh wow, that smells good!”
Next we season up the mixture while it’s still sizzling on the grill. The timing of the seasoning is pretty important. You don’t want to add it when it’s too early or the flavors won’t stick. But, you don’t want to shake it on too late or the spices won’t absorb properly. So, it’s best to season it just a few moments after introducing the ingredients to the blazing hot grill.
Once the entire batch has softened up a bit, it’s taken off the grill and set aside in a container where we sprinkle on some green spinach leaves for added color and flavor. The heat from the grilled veggies melts the leaves down quite a bit, so two large handfuls work perfectly.

As the lovely couples was filling the air with love & vows we were busy filling it with mouth-watering veggie taco aromas.
From here the veggies were placed on stand by as we waited for its first customer.
After the vows were exchanged and the best man and maid of honor finished up their speeches, it was chow time. Meanwhile, the veggies that were cooking in their own juices were nice and ready for enjoyment.
When a guest places an order for this meatless delight, we throw a fresh, hand-pressed tortilla onto the grill to heat it up a bit and cover it was a little bit of cheese. Then, we get a scoop of our fresh grilled veggies and place it on top. Then, we crown it with a generous squeeze of chipotle sour cream and it’s ready to be devoured.
This classic item was an absolutely hit at last Saturday’s wedding and we are proud to serve it again this evening in Santa Ana: 5:00PM to 8:30PM Cismontane Brewery, 1409 E Warner Ave Ste. C, Santa Ana, CA. See you there!
